WOOD BLEWIT
Lepista nuda has a blue to violet-tinged cap and gills when young, with pale pink spores. They sometimes grow in circles called ‘fairy rings’, which can appear overnight and were once thought to indicate that magic was at work. This mushroom is deeply entrenched in European folklore. Wood Blewit can be eaten as a cream sauce or sautéed in butter, but it is important not to eat them raw, which could lead to indigestion. They can also be cooked as an omelet filling, and they make good stewing mushrooms. Wood Blewit has a distinctive, strong flavor and smells faintly of aniseed, and is good in stews, omelets or fried in butter. They can also be used as a dye, resulting in a green-grass color.
